We learned in January that Pierre Hermé Paris opened a shop at Hong Kong’s Ritz-Carlton and started to serve fancy afternoon tea at Café 103. They have a new kind of afternoon tea to serve at Café 103. Starting next month they plan to serve Vanilla Afternoon Tea – a creation based on Pierre Hermé’s Fetish Infiniment Vanille collection. Hermé apparently loves the vanilla flavor and aroma so much, he ended up creating a special blend using three top quality vanilla beans from Mexico, Tahiti and Madagascar. Result is a unique blend full of characteristics – intensity from Mexican beans, and floral and oak flavors respectively from Tahiti and Madagaskar.
The Vanilla Afternoon Tea will be a joint effort of Pierre Hermé Paris’ executive pastry chef from Japan and the hotel’s Executive Pastry Chef, Richard Long. Their mouthwatering creations include Tarte Infiniment Vanille, a layered tart made up of a delicate shortbread pastry crust filled with white chocolate vanilla ganache, vanilla essence soaked cake and topped with vanilla mascarpone cream. Other sweets treats on the menu include macaron, cream puff and pound cake.
The savory treats on the menu are created by Brook Wong, Chef de Cuisine of The Ritz-Carlton, Hong Kong. He decided to add the vanilla aroma instead of flavor to his creations. One result of that is the Vanilla Smoked Salmon Roll that feature a delicious combination of vanilla oil, vanilla seeds, homemade smoked salmon and cream cheese. Other savory items include vanilla crabmeat sandwich with green apple jam and forest mushroom tart served with black truffle and vanilla sauce.
As always tea and coffee are part of the afternoon tea with champagne and other beverages provided on request. The Vanilla Afternoon Tea will be served daily between 3.30 pm and 5.30 pm beginning April 24th and ending on May 24th. Pricing per person is HK$388 (around $50).
