Italian jeweler Damiani and Ritz-Carlton, Hong Kong has teamed up more than one occasion to offer delightful dinner and afternoon tea menus. Both are back in business together again, this time to offer an afternoon tea menu at Tosca, inspired by Damiani’s Mimosa collection. As with previous times, the creation of Tosca-Damiani Afternoon Tea menu fell on Tosca’s Michelin-starred Chef Pino Lavarra.
As far as Damiani’s Mimosa collection goes, they use diamonds and gemstones to interpret the delicate airy nature of the Mimosa to perfection. Giorgio Damiani describes the collection as “a chaos of diamonds.” Inspired by the Mimosa collection, the tea menu items carry that same unique, airy look as light and elegant as its namesake spring flower. Once again, the jewelry house and Tosca followed their tried and trusted routine, and offer afternoon tea customers the opportunity to view the beautiful Mimosa collection displayed in a private dining room.
There are quite a few interesting Tosca-Damiani Afternoon Tea menu items. One such is the Mimosa Arlecchino collection-inspired Fegato Grasso, an edible ruby ring made with Foie gras terrine glazed in cherry syrup. Other savory items include a Multicolor Farfalle with sea urchin and Farfalle pasta salad; Vitello Tonnato with veal, tuna sauce, and caper leaves; Bagancauda with seasonal spring vegetable and anchovies relish, and Uova all’Insalata Russa – egg filled with micro insalata russa.
The Mimosa jewels are well represented in the yummy sweets section of the menu. The highlight here is the Alba Chocolate Truffle coated in grated tonka beans and cocoa crumbles, which is rich in flavor of 64% dark chocolate and black truffle paste filling. The Apple Glass arrives filled with apple jelly, caramelized apple cubes, hazelnut cream made with muscovado sugar hazelnut paste from Piedmont, and spiced bread in layers. Everyone with a sweet tooth can also get to enjoy Caprese Cake with Tea Cremeux filled with earl gray chocolate cream; Tomato Amaretti with orange, tomato and oregano cream and finally the Tortino de Gianduja consists of a crunchy Gianduja crocant enclosed by soft Gianduja hazelnut chocolate cream.
Tosca-Damiani Afternoon Tea is served in specially designed and elegantly crafted collection of plates, leather jewelry trays, and boxes.
