Caviar Afternoon Tea sounds like a mouthwatering affair. The Ritz-Carlton, Hong Kong’s latest holiday exclusive comes with a 10-gram Prunier Caviar tin with every serving. To enjoy this lavish festive fair, head over to The Lounge Bar from December 16, 2016, to January 2, 2017. The hotel promises a “tantalizing burst of flavors from the gem of the sea with afternoon tea”.
The small and dark grained Prunier Caviar is harvested from young Acipenser Baerii sturgeon in Russia’s Siberian region. In addition to Blinis, they serve a range of condiments such as crème fraîche, chopped red onions, egg white, and lemon wedges. To enjoy the slightly salted caviar in its pure and natural taste stick with Blinis and stay away from condiments.
As always there is a combination of treats to keep every taste bud happy. A host of delicious savory delicacies such as Boiled egg stuffed with egg yolk, French Dijon mustard paste, mayonnaise and pepper in the yolk cavity and the Devil Egg are on the menu to complement the main item. Another culinary masterpiece is Balik Salmon from the Barents Sea above Norway. Here the prime back fillets are seasoned with premium salt, smoked over firewood and then dried and stored for years – using a secret recipe of the purveyor to the court of the last Russian Tsar, Nikolai II. You can also tuck into Crab Meat Tart and Ginger Bread Sandwich with Smoked Turkey and Cranberry Jam.
To satisfy the sweet tooth, Executive Pastry Chef Richard Long and his team worked their magic on several sugary delights. Packed into a glass are Salted Caramel, Pistachio and “Jivara” Gingerbread Cream. Two airy pastry shells with the top covered with a fine coating of raspberry crumble are the base for soft chestnut cream and candied raspberry filled Mont Blanc Raspberry Choux. Others include Earl Grey Orange, Classic Macaron Plain and Raisin Scones with Jam and Clotted Cream.
