Ritz-Carlton Hong Kong is becoming increasingly famous for their afternoon teas. Every year, every season, they Ritz-Carlton Hong Kong raises the bar higher and higher  – it makes sense, after all, its called high-tea for a reason, right? The luxury hotel chain is kicking off the season of spring 2018 with the Perfect “Pair” afternoon tea with smoothly blended flavours of vanilla and Australian pear. The high tea will be hosted at Cafe 103 – Ritz-Carlton Hong Kong’s beloved venue among many because of its array of indulgent brews and bakes.

Executive Chef Richard Long uses Tahitian Vanilla from Leeward Islands of French Polynesia to bring only the finest and purest taste to the Ritz-Carlton guests. The Perfect Pair afternoon tea has distinctly strong notes of tropical volcanic earth with hints of prunes, licorice and chocolate – a tranquil brew that has been a local gem since the 1700s inspired by the Polynesian land.Chef Long compliments the aroma of vanilla with the dewy and chewy sweetness of the Williams Bon Chretien pear from Australia which is in prime season now!

Guests can look forward to an enticing menu that includes many delectable pastries like the Pear & Vanilla Verrine featuring pear-and-vanilla-infused cream, almond joconde cake, pear compotes and vanilla jelly artfully layered in a glass. The specially curated high tea menu also has a Vanilla, Pear & Muscovado Tart made from vanilla and pear compote topped with caramel-glazed muscovado cream encased in a crunchy chocolate tart shell. The Pear & Tonka Tart has the Tonka beans infused in the ivory pear cream giving it a lingering scent of vanilla that makes you want to keep eating.

Rtiz-Carlton Hong Kong’s other Executive Chef Peter Find has also designed four savoury treats to create a perfect harmony with the delectable desserts. Chef Find uses traditional dark rye bread from his home country, Germany, with refreshing raspberry jam, to balance the richness of foie gras terrine to make Pumpernickel with Foie Gras Terrine and Raspberry Jam for the high tea. Another dish by Chef Find brings together of smoked salmon, sour cream, lemon and vanilla seeds to make his Swiss Roll with Smoked Salmon Rillettes which is a symphony for your palate.

Ritz-Carlton Hong Kong will be serving the Perfect Pair Afternoon Tea menu from March 1st to April 30th in Cafe 103 starting at $82 USD for two. Ritz-Carlton and afternoon high teas are indeed the perfect pear. Oops, pair!
