Northern summer is almost over, so the international airlines are updating premium class menus (and amenity kits) for the cooler climate with seasonal produce, and not to mention the holidays that are coming up. Air China has teamed up with Ritz-Carlton, Beijing to create an exclusive gourmet menu for all first class cabins on routes between China and North America from 1st August (which was yesterday).
When your official motto is “Enjoy Flying” you have an obligation to offer passengers ways to do it. To this end, Air China is worked with Amedeo Ferri, the executive chef at hotel’s signature restaurant, Barolo. As one would expect, Italian-native Chef Ferri specializes in pairing Italian food and wines. Chef Ferri is an expert in picking the right ingredients for the flavors he wants to create with dishes, these qualities have helped him in the creation of a special menu for Air China.
In addition to Ferri and his team at Barolo, Air China used the services of airline catering specialists, Beijing Air Catering Co. Ltd. Providing high-quality catering is just one of the service this large catering company offer, they also offer food safety regulations to over 50 international and domestic airlines and other ground services clients. Selection and development of dishes fell on head chefs at Beijing Air Catering, afterward, it was left to Ferri to pick the best ingredients and flavors. This process ensured every delicious item on the gourmet menu is of the highest quality, suitable for mass production and ready to be served 30,000 feet high without losing quality and taste.
Air China’s efforts to improve dining options in premium classes started last year with the rolling out of localized menu options for different departure points of the world. For passengers on German routes they now serve quality caviar beside six nutritious, seasonal Western meals so passengers can “taste the seasons from their seat” and in Japan routes, they have gone for the best Japanese dishes. In Shanghai flights, the airline introduced six new international meals. In the past few months the gourmet meal update also saw the introduction of holiday menus – for Children’s Day they handed out gift boxes, during Chinese New Year they served multi-colored handmade dumplings and sticky rice parcels for Dragon Boar Festival.
